Dan Dan Noodles Recipe (四川坦々麺)

In this recipe, I will show you how to make Szechuan Dan Dan Noodles 四川坦々麺 one of the most popular street food of Sichuan, China. Dan Dan Noodles (担担面, dan dan mian) is a dish where noodles are topped with a spicy and savoury sauce, and complemented by crispy minced pork and peanuts. When the sauce and noodles are mixed together using chopsticks, the taste is spicy, numbing and addictive.

This Szechuan Dan Dan Noodles are made with my own original recipe of base sauce, sesame and peanut paste, chilli oil that really packed a punch. I used a mix of pork and beef for the crispy minced meat to add more dimensions for the taste. Instead of standard Chinese handmade noodles, I used Japanese style handmade ramen noodles to make this unique point for my recipe. Once the noodles were mixed with the sauce, the flavours exploded and the fragrance was amazing! I think this is my best recipe for Dan Dan Noodles so far.

How to make Dan Dan Noodles

Ingredients

for SAUCE

for NOODLES

  • WATER 152ml
  • KANSUI 5g
  • SALT 5g
  • FLOUR 400g

for OIL

for CHASHU

  • RICE BRAN OIL 1tbsp
  • CHOPPED GARLIC 1tsp
  • CHOPPED GINGER 1tsp
  • MINCED PORK 150g
  • MINCED BEEF 150g
  • MISO PASTE 1.5tbsp
  • SUGAR 2tsp
  • COOKING SAKE 20ml

for TOPPING

  • ROASTED PEANUTS 20g
  • SESAME SEEDS 30g
  • RICE BRAN OIL 50ml
  • SHIRONEGI 1pc
  • CORIANDER

for DAN DAN NOODLES

Methods

STEP 1 : SAUCE

1. Add Koikuchi Shoyu, Cooking Sake, Sugar and Oyster Sauce to saucepan.

2. Start to boil.

3. Stop once sauce boil. Sauce is done.

STEP 2 : NOODLES

1. Add Water, Kansui and Salt to cup. Then mix.

2. Add Flour to mixing bowl. Add kansui mixture and stir to mix.

3. Push and fold into flat dought in a bag.

4. Set aside for 40min.

5. Flatten dought using noodle machine.

6. Cut into lang thin noodles. Noodles are done.

STEP 3 : OIL

1. Add Rice Bran Oil, Chopped Onion and Chopped Garlic to a pot.

2. Start to cook at small fire.

3. Add Chinese Dried Chilli, Ginger, Star Anise, Japanese Chilli Powder and Szechuan Peppercorn when onion and garlic starts to change colour.

4. When onion and garlic tuen golden brown, add White Pepper Power and stop fire.

5. Ramen Oil is done.

STEP 4 : CHASHU

1. Start fire and add Rice Bran Oil to pan.

2. Add Chopped Garlic, Chopped Ginger, Minced Pork, Minced Beef and some Salt.

3. When meat is fully cooked add Miso Paste, Sugar and Cooking Sake.

4. Fry until evenly mixed and meat is fragrant and crispy. Minced meat CHASHU is done.

STEP 5 : TOPPING

1. Add Roasted Peanuts, Sesame Seeds and Rice Bran Oil to blender.

2. Blend well.

3. Dice cut Shironegi into fine pieces.

4. Toppings are done.

STEP 6 : DAN DAN NOODLES

1. Add Ramen Sauce, Sesame Peanuts Paste, Chinese Black Vinegar, Chilli Oil and Katsuo Powder into a bowl.

2. Boil Noodles for 1.5min

3. Add Noodles into a bowl.

4. Add toppings.

5. Dan Dan Noodle is done.
